Victoria Sponge undergoes Jubilee makeover by TV chef to become the ‘Elizabeth Cake’

To inspire Brits who will be baking during the Queen’s Diamond Jubilee weekend of festivities, TV’s master patissier, Eric Lanlard, has created a Victoria sponge recipe with a twist - the ‘Elizabeth Cake’.

Using traditional British ingredients including fresh strawberries and mint, the recipe is exclusively available in the homebaking aisle of Sainsbury's nationwide from May 23. For three weeks, Silver Spoon ingredients from the recipe will be on a 3 for 2 offer*, making it not only the most fitting, but a very affordable cake to bake for any Jubilee celebration.

The essence of the cake is the sponge and strawberry filling while the decoration on top is an optional extra. 

Baking guru Eric Lanlard says: "The Jubilee is a once in a lifetime chance for the nation to get together and celebrate an extraordinary sovereign who's been on the throne for over 60 years. This is why I created this Elizabeth sponge cake recipe, my take on the classic Victoria sponge, with a contemporary twist and look.
